These green little beauties are a perfectly tart and sweet treat to enjoy without the guilt. I saw these gummies and had to give them a try. Take the scrumptious kiwi that is high in Vitamin C, gelatine great for joint health, lemon, and honey to come together to make these delicious kiwi gummies. With only four ingredients, you’ll be clamoring for more!
Kiwi Gummies – Step One:
The first step to preparing these kiwi gummies is really quite simple: peel the kiwi! The easiest way that I’ve found is to cut off the top and bottom, then starting from the top work your way down until the whole kiwi is peeled. I like to have a bowl nearby to put the peels in so I can put them in the compost.
Kiwi Gummies- Step Two:
Blend the kiwi in a food processor until relatively smooth. Then heat the puree over medium heat with the honey and lemon juice. Stir it constantly until it starts to steam, not boil. Vitamin C is very heat sensitive and we don’t want to lose those nutrients! When it begins to steam, slowly whisk in the gelatin.
Kiwi Gummies- Step Three:
After the gelatin is completely dissolved, you can pour the mixture into a glass dish or even molds if you have them. Put them in the refrigerator to set. There is no need to grease the pan or molds as this comes out pretty easily.
Kiwi Gummies- Step Four:
After they’ve set, simply cut into squares and serve! They come out of the pan very easily. Once you score the gummies with a butter knife, you can practically pick up an entire row with the knife and set it onto a plate.
Kiwi Gummies Recipe
- 8 peeled kiwis
- 4 packets of gelatin or 2 TBS (up to 6 TBS depending on preference)
- 2 TBS honey
- Juice of a lemon
- Peel the kiwi and puree
- Over medium heat add the honey and lemon juice
- Once steaming, add the gelatin and stir until completely dissolved.
- Pour into a glass dish or molds
- Refrigerate until set, one hour (or less)
- Cut into squares and serve
- Makes about 70 pieces depending on cut size
We really had a hard time not shoveling these in our faces. They’re the delicately sweet and sour flavor you love from kiwis with the health benefits of the gelatin with neat occasional crunches of the kiwi seeds. Truly a unique and fun treat that is very easy to make.
I also highly recommend these for when little ones might not be feeling well as they’re easy to handle, deliver much-needed nutrients, and can be soothing to a sore throat or upset tummy.
